Here's a recipe I'd like to share with everyone. It was a big hit over the holidays! Enjoy!! 
<span style="font-weight: bold">Jamaican Banana Layer Cake</span>
1 1/2 C heavy cream soured
1 T lemon juice
1 C unsalted butter, softened
2 C sugar
4 large eggs
2 Tsp pure vanilla extract
1 T strong coffee or rum
1 C pureed banana
3 1/2 C all-purpose flour
4 tsp BP
1/2 tsp BS
1/2 tsp salt
1/8 tsp ground cinnamon
1 C sweetened shredded coconut
1/2 C finely chopped macadamia nuts
(I use pecans)
1/2 C semisweet Choc chips
( I use the mini ones)
Jamaican Frosting
4 T cream cheese softened
3/4 C unsalted butter softened
3 to 4 cups of conf sugar
1 T rum
4-6 T of strong coffee (or as required)
Finishing touches
2-3 bananas thinly sliced
toasted coconut
toasted chopped macadamia or pecans
Preheat oven to 350. Generously spray 3 9-inch round cake pans with nonstick cooking spray. Place on parchment paper-lined baking sheets.
In a large mixing bowl cream butter with sugar until pasty. Add eggs,vanilla, coffee or rum, and then pureed banana. Fold in soured cream and then fold in flour, baking powder, baking soda, salt and cinnamon. Blend well scraping bottom of bowl to ensure ingredients are mixed well.
Spoon batter evenly into pans. Sprinkle coconut, nuts and choc chips over batter in each pan.
Bake 30 to 35 minutes until cake springs back when gently pressed with fingertips. Cool 10 minutes. Invert layers only large sheet of parchment paper on a work surface and transfer to freezer to chill 30 minutes.
(I just put the whole pan in the freezer it works just as good)
For Jamaican frosting, place all ingredients in a mixer bowl and blend, adding enough coffee as required to make a spread-able frosting.
To Assemble Cake---- Place one cake on serving platter, coconut side down, smear on some frosting and then add a layer of sliced (very thin) bananas. Repeat with 2nd layer (it usually takes about 2 bananas)
Add final cake layer and frost top and sides of cake. Garnish top with toasted coconut and nuts. Chill slightly before serving.
