mi go crazy every time dem start to ripe,now my kids neva really like dem just so,an mi had to goh fine recipes an den nice dem up fi dem, put dem always get tired of meat here is a few of the favorites in de house
Creamy Tomato&Basil Fettuccine
4 tablespoon olive oil
4 plum tomatoes chopped coarsely (but you can use your garden ones)
1 small onion chopped
4 cloves garlic
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup white wine (optional)
1/2 cup heavy cream (can use carnation)
1/2 cup chicken broth (if you dont use wine use 1 cup broth)
8 basil leaves chopped fine
fettuccine pasta (but which everyone you like)
in a large nonstick skillet heat oil over med.high heat.add tomatoes,onion,garlic,salt and pepper,cook until onion is soften about 8 mins.stir in wine ,cook stirring occasionally,until reduce slightly about 2mins.stir in soup and cream,cook until bubbly about 2 mins.remove from heat add basil.stir if pastan not ready set aside
in the mean while pasta should be cooked or
almost cook,drain,if the sauce pan is really big toss with sauce,if not get a big bowl toss pasta and sauce together and serve.
now my misereble kids want shrimp wid dis sauce,soh if mi really feel nice to dem mi just clean an boil some shrimp den toss it in there sauce really good they say.

dis one is like bruschetta,but i make up the tomatoes to go with supper, roast beef most time but any meat or just bread

8 chopped roma plum tomatoes (but use what you have)
1/4 of a red onion chopped small
3 cloves garlic minced
6 basil leaves chopped
4 tablespoon olive oil
1/2 teaspoon red wine vinegar
1/2 teaspoon salt
fresh ground black pepper
combine tomatoes,onion,garlic and basil in a medium bowl.add olive oil.vinegar salt and pepper and mix well.cover place in the fridge for about an hour then serve.
