The challenge from nuggett, to find flour to replace wheat in fried dumplins.
hence *Soy Flour
*2 cups of organic soy flour
*1 cup of organic yellow cornmeal
*1 tsp sea salt
*3 tsps baking powder
*3/4 cup filtered water
*olive oil
It makes a very pasty dough, so the cornmeal was essential.
My first turn off was the smell, it just smelled so like a chemical, I was used to flour no really having any major dectable smell that this really turned me off.
It fried really good, but I hated the taste of the result. I trashed it, I am not a soy fan.
This would be good if the recipe was inverted and 2-2.5 cups of cornmeal was used to 1 cup of soy flour. . soy flour is closer in texture to wheat flour but very glutinous, even though it has no gluten, so it required lots of screening to get lump out than form in storage.
I think I will stick with Wheat Flour
Next I will try Teff if I can find it or Spelt which is related to Wheat.
Teff is beautiful, used mainly in Abyssinia it is from a very tiny grain, the flour is very light and must be mixed with another to make it possible for something like dumplins!
