Me have a request fi mek corn powk. Suh me agree, yes me gwine mek ie dis weekend.

Now all in a sudden, me nuh membah wha fi do.

Is long time me nuh mek corn pork...di one whey yuh fry ie and cook ie up wid onion.

All me a try membah, me can ungle draw a blank.

Yes. If you're going to cook it with ackee, soak it, boil it to soften it a bit and get rid of any excess salt, cut it up into small pieces, fry it then add the eskellion, tomatoes, onions etc. as you would with salt fish.

yu haffi soak it, then fry it up. i'm assuming it's the fatty part with the skin. pat it dry in paper towels. cut it with a sharp knife while it's still hot = yet not so hot to burn yourself. heat the pot and then put it in the fry. you don't need oil as it will render it's own oil.

then cook up di bully beef and plain rice and drap the fried bits in there.

Maybe you could get a piece of pork and cure it yourself. That would take a few days though. Haven't seen or had it in ages.

lexy is right Pepper. my aunt used to cure it in buckets herself. but if you put some salt on some pork belly you're good to go by the weekend. it's wont be as highly corned/salt though, but you'll still get the taste you're looking for. needs less soaking probably will just have to boil it out a bit.
