<span style="font-weight: bold">Pepper</span>, here is the recipe. I could have sworn I had one for pork but mi caan find it. Anyway, this is for beef but I don't think it makes a difference. By the way, all this talk about salt pork got me craving some so I did make some ackee and bacon today. Tasted real good and a welcomed change from the norm.

4 lbs brisket (pork)
2 tbsps. saltpetre
1 1/2 cups coarse salt or 1 cup salt
12 pimento seeds
2 tbsps. brown sugar
1 cup boiled cool water

Cut gashes in the meat on all sides. Mix all the ingredients together and fill the gashes. Pour the rest over the meat and make sure it's thoroghly seasoned. Cover and sit in refrigerator for 2 weeks. Keep turning every 5 days.


Now, I'm going to search for other recipes so if I come across any I'll post it.
