mi no master pimento yet, so mi use it rarely.

my hand is heavy with garlic, mi mek guacamole yesterday and all evening mi a burp garlic. i like to throw in some fresh coriander leaf too in guacamole.

i'm getting to like cumin - made a split pea soup with a hambone the other day and added ground cumin, gave it a nice extra smoky flavour.

mi learn from G2 fi put star anise in fish dishes.

mi mek diced cucumber and tomato relish wah day and on an impulse added mint in with the parsley - the mint gave it a great kick, kids loved it!

i love kids who love kitchen mistakes. kine a line di di furst time mi try cook snail and dem tun out like led pencil erasers. my kids loved em.

love nuff onions in everyting..i even add it to white rice..love it shopped fine to where it cooks out an yu juss taste the flavour..or where there are bits that you can crunch into

try chopping a little few basil fine...mixing it in with a simple salad (letuce, tomato and Cucuber) and adding a swigof olive oil and leave to marinde for a few hours in the fridge...

I have been iscovered that if you combine ginger and pepper it enhances the pepper....

This week end I went to a town once over and there was a delicatessent called the Kilted Frog.. The owner had whole garlic boiled and then soaked in olive oil with spices... as an alternative to whole oilves.. I tried it and was blown away by the taste.. He swore it wont give dragons breath....

i can only abide vulgar thyme. even di big leaf one weh dem ha (i think that's actually called Jamaican thyme) the flavour is fleeting.

Love pimento. I believe the rule is no more than six in an average stew pot.

Odda wise in di cupboard, me have:
Basil
Bay leaf
garlic (fresh, minced in olive oil and powder)
rosemary - just started using this one...use only on chicken so far
Oregano - Started using a while back, love this one now
Onions
Scallion
Scotch Bonnet
ginger
thyme

do you grind the pimento first? biting into a whole cooked seed is pretty unsavoury

I don't grind them, that makes the taste stronger and more bitterish....like when you bite into a whole one.

just the aroma alone when its cooking is worth it..

but what do you mean the flavour doesn't last?

Pepper, potatoes salted peppered rolled in olive oil and finely chopped rosemary then roasted is very nice. rosemary basically good pan anything roast - veggies, lamb.
