Dasheen is a tyberous root closely related to Co co. and don't tell me you daon't know coco either. That reminded me of some Haitian kids that came to Jamaica top learn English. None of them understood French and the course was to teach them to tranclate from french to English So they had to learn some sort of french before they could do the english. So if you don't kniow co co, I can't help you either. <span style="font-weight: bold">The secret to peeling cassava is to score the skin about 1/8 of an inch deep in a spiral around from end to end.
then take the kinfe and lift the skin and unroll it from one end to the next. Mr Great Gran did it that way. </span>

remember: there are two types of cassava. sweet cassava which is edible and bitter cassava which is poisonous. they are very hard to tell apart.

yeh. they also call it manioc.

both are edible
the bitter one is used to make bammy
and you dont peel it you scrape off the skin
and then you grate it
then you wring out the water and make it dry

there is a difference
but then they also have a bitter one thats called ketch teef
and if you noh kno better you wi bwile ie and eat ie an it wi pizen you

They are not hard to tell apart if you know the difference. Sweet cassava leaves have a <span style="font-weight: bold">slightly purpleish color </span> and the bitter cassava leaves are <span style="font-weight: bold">solid green</span>. Bitter cassava (as it is known in St. Bess) is grated and processed (put into a &quot;cutokow&quot; and pressed overnight)and is used to make bammies and cassava flour dumplings. The juice from that is used to make starch as SsweetSsop noted above. The sweet cassava is boiled and eaten just like you would any other root vegetables. To people from the spanish speaking islands cassava is known as yucca and dasheen and/or badoo as malagna (sp). Thieves never stole cassava from people 'grung' a nite time because in the night dem could not tell the difference between the sweet or poisonous cassava.

Well done Dr. Dudd you well know how to score and peel the cassava.
