I'm getting reeeally good at this.
You will need:
fresh garlic, peeled
anchovie filets
croutons
egg yolk
lemon
mustard, spicy brown or I prefer dijon for a nice kick.
worcestershire sauce
olive oil
Parmesan cheese
cracked black pepper
romaine lettuce
I start with everything in a small food processor, purists smash everything by hand in a wooden bowl. Mi nah so peer...
Ok first I use anywhere from <span style="font-weight: bold">5-9 cloves of garlic</span> for about 1 1/2 -2 heads of romaine
1 or 2 anchovies
1 or 2 egg yolks
5-6 croutons
puree all together
Once this is well smashed,
add 2-3 tablespoons of mustard
juice of 1 lemon (hint* microwave the lemon for 10-15 seconds before cutting, you'll be amazed at how much juice you get out of it.
Mix
add 2 tbs or so of worcestershire sauce
mix
add some grated parmesan & mix again.
Now, if you have a food processor with a tube that you can use to add to the mix, while pureeing, slowly add olive oil... about 1/2 cup or so.. until well blended.
Toss with <span style="font-weight: bold">washed & dried</span> torn up lettuce, adding croutons & more parmesan to taste until well coated with dressing.
I like to pour the dressing in a big wooden bowl and tilt it untill the sides are heavily coated. then add lettuce etc & toss well.
Finally top with fresh shredded parm & cracked black pepper.
Note: I LIKE a lot of lemon & garlic, all ingredients can be adjusted according to taste. I watched a friend do this for the last 20 years and finally gave in and made my own.
Once you've had a few like this, you'll know what you like more or less of.

question, how you buy you anchovy dem? i've never had occasion to buy anchovies. dem come eena can or bakkle?
