Mi cyaan get no pickle mackerel whe mi deh and di smoke mackerel inna di supermarket dem too softie-softie, so a whole heap a years mi neva nyam nu Run Dung.
Day before yestided, mi go inna wan Russian shop and dem did have smoke mackerel, whe nuh softie-softie. Die woman explain to mi seh di one inna di supermarket smoke hot, but di one whe she have smoke cold, which is why it was so nice and firm, so mi buy one and use it mek Run Dung yestideh.
Di sitten did nice cyaan dun. Just di memory mek mi mout start spring water again. Mi eat it wid two cornmeal dumpling (forgive me mama) and a small slice a yam. brought back memories.
Mi did have two non-jamaican visitor yestideh, dem love it an all ask fi seconds.

Well since nutten beat a trial, but a failure, mi interested fi know whe unoo use as substitute fi di tings dem whe unoo cyaan get fi buy.

BTW, a south florida me deh, so me really not lacking of any JA food products.

Sarry fi jus a answer, mi neva deh bout fi a few days.

Ingredients:

1 tin coconut milk, or juice from one very dry coconut.
1 lb mackerel, if it is the pickled one, either soak it over night in some lime water, or boil for about ten minutes in a pot of water, with a little lime juice added. Place in some cold water and wash removing the outer skin and the bones.
Do not boil smoked mackerel. Place it in cold water with a little lime juice to soak until the gravy is ready, then remove skin and bone and wash.

1 large tomato, cut into small pieces
1 medium sized onion, peal and slice into rings
a piece of scotch bonnet pepper to taste
1 sprig thyme


Method:

Cook coconut milk in sauce pan until all the water has been cooked out and it is only oil and custard,
Add tomato, onion, onion pepper and let them cook until ready, then add thyme.

Cut or break mackerel into small pieces, place in run dung and let simmer for about five minutes, if using pickled mackerel and about ten minutes if using smoked mackerel.

It nice with boiled green banana, yam and dumpling, but I've eaten it with roasted breadfruit before and it was the hammer. It even taste good with bread, so enjoy

Pepper: I used tinned cocout juice and didn't notice any difference between it and the ones I have grated myself.
