After marinating the goat in seasonings overnight, I prepare a hot oven @ 425-450F. I spread the goat in a roasting an mek it brown good until the edges almost appear crispy ... about 25 minutes. I pour off all that fat. Then cook di goat di usual way. This works if I have a whole heap a got to cook like seh fi a pawty.
The pre-roasting gives the goat a nice flavor.
