Jerk Seasonings

I would like some of the locals to chime in here if you would please.
I`m looking for a traditional jerk seasoning recipe for chicken. I know there are a hundred different ways to make this seasoning, but I am trying to find a recipe thats as close to traditional Jamaican as possible.

I use Walkerswood in a jar....pretty much as close to home-made as you can get....don't use too much!...nuff peppa in dey!

I disagree, Walkerswood dry rub is way better than that mess in the jar.

I've never seen that in the grocery stores here....would be more than willing to try it, if I could find it! </div></div>

This recipe I used as a base for my own version and is a consistent big hit. I adjusted some of the seasonings, such as less scotch bonnet and less red pepper and less salt for when I am cooking for a crowd and then cook some of this recipe down on the stove to use for a dipping sauce. (not the marinade from the meat but the excess I didn't use. You need to toss any used marinade away once you soak your chicken!) I play around a little bit here and there with it but here it is and I've been using it for years.

Big Red's Jerk Chicken

1 tablespoon ground allspice
1 tablespoon fresh thyme leafs
1 1/2 teaspoons cayenne pepper
1 1/2 teaspoons black pepper
1 1/2 teaspoons ground sage
3/4 teaspoon groung nutmeg
3/4 teaspoon gound cinnamon
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon sugar
1/4 cup olive oil
1/4 cup soy sauce
3/4 cup white vinegar
1/2 cup orange juice
Juice of 2 limes
2 scotch bonnet peppers seeded &amp; chopped
1 cup chopped white onion
1 bunch green onions finely chopped

Add all together,stir well. Add chicken or pork, or both, and marinate refrigerated over night.

Cook slowly on outdoor charcoal grille.

Heat left-over marinade to a slow boil and use for dipping sauce or over coconut rice.

There are some other recipes on Marbles' website also that are kinda fun. I don't use her fast rice and peas recipe as I make mine the old traditional route minus the wood fire. The steps look easy enough for a quick meal though! (I would go traditional for company though and nix any thoughts of making a short cut version)!

Edit to add...I marinate overnight for cut up chicken pieces, and if I am doing a quick meal with boneless skinless chicken I marinate for 2 to 3 hours. For pork I marinate for 2 to 3 hours.

PS...Sometimes I can find scotch bonnets in the natural food section at my grocery store in a jar. I noticed you are from Iowa so figured you may have the same problem! I will substitute Habenero peppers in a jar for the scotch bonnets but never any Mexican pepper, or banana pepper, none of those.. In fall I can usually find some fresh scotch bonnets or habenero and I will buy a bunch and just throw them in the freezer. no freezer prep needed and they will last you a long winter, or two even!

Thank you Nanook for the recipe. I`m not the main buyer of groceries in my family and am not sure I have ever seen Scotch Bonnet peppers before in my local stores, so I`m glad I can substitute Habeneros instead if I dont find the other.
Glad you posted a recipe I can do myself seeing that I cannot currently buy the Walkerswood product on its own site.

Enjoy the recipe YoMoma! BTW, I throw this all in a food processor and whirl it a couple of seconds so everything gets chopped super fine &amp; I don't spend a lot of time chopping.
