mi a go try a ting. i neve made it but mi memba mi granny use to cook it. i am sure meat is meat no?

first mi wash it off and mi ago scald aff some a di salt....

den mi just a go mek it tek time cook. den wen it cook mi will put in peas (can kidney beans)
mi a cook it like how u cook stew peas.

mi wi tell oonuh how it turn out. if yuh no ere from mi send tanya come look fi mi at di hospital

pigs tail, neck bone, sweet meats...dem awl good wid dried peas

mi use pigs tail juss lass week wid some pinto beans...cawnbread...white rice

Missus_Vegas - you need to cut the pigs tail and soak it overnight. Buy a bag of red dry kidney beans -- wash and soak overnight. You also need a small piece of salt/corn poak/beef also a small piece of fresh beef/poak. Use a pressure cooker and pressure the meat for 20 minutes then add the peas. Add a few pimemto seeds and a couple cloves of garlic to this. Cook until the peas/beans and meat are soft. Add 1 whole scotch bonnet pepper, scallions and thyme at the very end and simmer for about 10 minutes. Make sure that it looks like a stew not like long pat water. You can add spinners in there if you like. Don't forget to take out the pepper before serving.

Stew peas and white rice................

OK Tanya - you need to school her in ole time cooking ways because dis crock pat cooking no taste the same at all. And like how man hard fi fine I don't want her to lose the one that she has. (You know Tanya dere was a time when JA man never eat stew peas from wooman - dem tink sey you're trying to catch dem - but tings and time change nowadays dem nyam anyting).

I have a pressure cooker but mr man dash weh di wait inna di garbage or someting cus mi cyan fine it. hence why mi affi mek it tek time cook.

btw it turned out pretty good. and i did put onion and garlic and all dem tings. lawd oonuh mek mi look bad... and yes i did put piece of pork as well it wasnt just di pigs tail. next time if i make it i will soak it ovanite so mi wont have to scall it.

as for di peas...mi cyan badda fi cook dry peas. di can one will have to do.
