Every week I buy 2 pounds from him, wash it, clean in add my ginger, boil and steep it. Add sugar (no rum yet, I'm waiting till later in the month to start adding that) let it set, then fill my bottles. Some I drink, some I give away to friends and neighbors and others I put into the freezer and use them throughout the week. Luckily I have a big 3 gallon pot I once used for canning fruit, so it holds a good amount.
