((G2)) shared this receipe with me one year cause I am changelled in making rum cake from scratch...........try it!
Ingredients
Cake:1 cup chopped pecans
1 (18oz) pkg yellow cake mix
1 (4 oz) pkg. vanilla instant pudding
4 eggs
1/2 cup cold water
1/2 cup cooking oil
1/2 cup appleton special rum
Glaze:
2 oz. butter
2 oz. water
1/2 cup white sugar
1/4 cup appleton special rum (amber color)
Method:
Cake:
Preheat oven to 325F. Grease and flour a 10" tube or Bundt pan. Sprinkle nuts over bottom of pan.
Mix all cake ingredients together-batter will be runny. Pour batter over nuts. Bake about 1 hour. Cool. Invert on serving plate. Prick top.
Glaze:
Melt butter in saucepan. Stir in water and sugar. Boil 5 minutes, stirring constantly. Remove from heat and stir in rum. Drizzle glze over top and sides, allowing cake to absorb glaze, repeat untill all glaze is used up.
