has anyone heard of cassava cake?

a teller in my bank, gave me a slice today…she is Filipino n we chat about our shared foods etc..so today she asked me if i eat cassava…so i said yes, and explained how we used it in Jamaica…she says she had baked a cassava cake….it was delicious….i picked out the taste of the coconut milk immediately….and she had shaved coconut as the topping….i just had a corner cause all dat starch etc woulda kill me if mi had a whole slice…. also told her how to get the fresh milk from the coconut itself rather than use the canned….

anyway it is mixed and baked like a cake…with eggs n coconut milk….

before i tasted it, i asked her if it was like a corn pone…of course i was forgetting dat is juss us call anything pone…so i mentioned a corn bread…..anyhow, no yeast is used n now that u mention it , it does have the consistency of a pudding….but it was light in texture…almost like a cheese cake….but it was delicious…i wanted to have a whole slice but restrained myself….all dat starch was too much …n i don't eat from people normally but took a leaf of faith as we chat every time i am in the bank…glad i did taste it….grin

we have similar climates and similar histories.....analagous migratory patterns in the 20th centuaries, We havent had a war fought on our soil.. We have similar destructive tendencies.... we are both innovitive... Jamaicans are in general more assertive...

i worked with filipinos in Africa over the years.... been patched up multiple times by filipina nurses... had a brilliant detail of ex filipino special forces in a couple operations, worked with filipino boat crews from the barents to the falklands, (to get the best out of the filipino sailors you have to discuss with them individually and notice when they do something on their own initiative .. public meetings don't work) even had a lost distant relative who lived there at the turn of the 19th centuary.....yes a cuz in the philipines....

over the years i became aware that they have some farming techiques that we could adopt..

it was a filipino who alerted me to the connection between the Princess of Wales and St Elizabeth.....

look up the Huk rebellion....the Moros rebellion, and the other KKK... The Filipino American war....it is a very complex society...

I confess that i dont watch television i havent for the last 4 years. Except sport. world Cup i would like to watch more cricket..I have nothing against television but i tend not to have time to watch it.... But i watch a lot of television programs on download...(in the gym i watch televison programs on my pad when i am on the elliptical trainer so that is 3-5 hours television a week PROGRAMS I am watching is Gang Related, Suits, The Last ship, Falling Skys, Under the Dome, just finished Power so it is not intellectual superiority it is time issue). I tend to listen to a lot of BBC news radio....Radio 4 and World Service....in the car and when i am home.. i estimate around 12 hours a week.. This week was an exception i watched a program on Meat it was on the BBC and its sustainability that cuts through alot of the enviromentalist bull**** about organic farming...done by a doctor.. it was a more nuanced approach that looked at intenstive farming from a cost, energy and protien consumption perspective...

no i havent got to Fledg latest book yet, i do have it electronically though.. i will buy a hard copy.. I wont for a little while.. i am ploughing through Beevor World War II (it is not hard reading it is just alot of reading!) and then i have the the Jung Changs Biography of the Dowger empress Cixi to read first....jung Chang writes a book a decade on China and her Biography of Mao is a must read....Beevour is always a joy to read... been a Fan of his since his door stopper on Stalingrad.... He does not pull punches but his book has flaws...not in fact but in perspective... there is a chapter so far on the german occupation of Europe and Russian but nothing on the german occupation in Africa. His opening is brilliant, it follows thhe life of a korean who fought with the Japanese, the Russians and finally the Germans and was taken prisoner by the Yanks in France... it is a better reflection than other books on the subject...

then Fledg is a pretty smart cookie...

yes i remember cassava dumpling…di ongle ting dat taste betta dan dem, to me, is wen u dry the last of the corn crop pon di bar-b-que…to the unschooled, dat is wat we called up in my hills, the flat rectangular piece of concrete or asphalt u have pon u property dat is used to dry food….ears of corn , cocoa, coffee etc….after the corn dry, u grate it n use dat fi mek dumpling….oh mercy….wid juss cook up seasoning it was deeeelicious….only ting mek it even betta was eating off a juss cut banana leaf……

i have the hardcopy plus i downloaded it to mi macbook n mi three iPads…fi real…mi tell u bredda dat if mi broke one day mi going to beg him di royalty him mek off me….i really love reading it…i want to write a review on Amazon, n have been rereading it at every chance…am going to be travelling next week n plan to take the time on the flight , to read it right thru in one final reading…it is only 200+ pages….
