1 tablespoon olive oil
1 very large onion, chopped <span style="color: #CC0000">use more if you like it </span>
2 bay leaves
1 teaspoon ground cumin
2 tablespoons dried oregano
1 tablespoon salt
2 teaspoons fennel
2 stalks celery, chopped
2 green bell peppers, chopped
2 jalapeno peppers, chopped <span style="color: #CC0000"><--- but mi use scotch bonet instead </span>
5 cloves garlic, chopped
2 (4 ounce) cans chopped green chile peppers, drained
1 (12 ounce) package vegetarian burger crumbles <span style="color: #FF0000">mi like morningstar, but boca works well too. </span>
1 (12 ounce) package vegetarian sausage crumbles <span style="color: #FF0000">again mi like morningstar, but boca works well too. </span>
2 (28 ounce) cans whole peeled tomatoes, diced
1 (28 ounce) can of whole tomatoes <span style="font-weight: bold">in tomatoe sauce</span>, diced
1/4 cup chili powder
1 tablespoon ground black pepper
1 (15 ounce) can kidney beans, drained
1 (15 ounce) can black beans
1 (15 ounce) can whole kernel corn <span style="color: #CC0000">sometimes mi use it sometimes mi dont </span>
now all of these ingredients you can play with until you find the combo you like. the trick is to brown the veggie crumble in the pan with the onions, garlic then add the rest of the stuff and simmer for 1 hour on low heat.
this also makes an excellent crock pot meal.
