Nope. I find freezing them raw works better. That way you only cook the ackee once, and they stay firm throughout the cooking process.

Maybe cause him use a sauce pot instead of a frying pan....more condusive to steaming.

i made it in my dutch pot which is excellent for getting things to spring their natural liquid. i did have some sauce, but not as much as dahjah.
