<span style="color: #3333FF">Does anyone know how to make beans like the ones served in Hispanic restaurants/cuchifritos? The soupy kind served over white or yellow rice. The beans are red, probably kidney or maybe pink beans. Maybe pinto. I don't know. </span>

u can take out the potato and see how it comes out, but i believe the secret to the creamy sauce, etc. is the tomato paste. I say this because i know of a kenyan family that usually cooks beans (all kinds) when we visit, and whenever we ask how they get the beans so thick and creamy, they tell us it's the tomatoes.

For rice, first using a cooking pot, bring 2 quarts of water to boil. Then add your oil and salt. After water is boiling, put in rice. Stir occasionally. Cover rice until rice has become dry and single grain. Serves 4 to 5. </div></div>

i just realized the chicken broth and pepperoni seasonings. for these i'd most likely substitute some sort of vegetarian chicken or beef seasoning such as mckay's or any other alternative to make it a completely vegetarian/vegan diet, if that's more desirable.

You can make the sofrito yourself. The sofrito is the part that makes or breaks the bean dish.
The sofrito is basically
Sorry I don't measure.
Olive oil
finely diced onion
crushed garlic
salt
oregano
finely chopped cilantro
tomato sauce or fresh diced tomotoes.
You can spice it up anyway you would like. Some people add meat and/or meat stock.
Sautee all your desired ingredients
Add cooked beans
Cook down to desired thickness
refry if you are going Mexican7/5th of all people do not understand fractions.
