mi fine wen u leave plantain in plastic bag it make dem sweat
de best thing to ripen stuff in is paper in a daark cool place

I saw on TVJ last week a segment from Grace Kennedy's Creative Cooking, Chicken breast stuffed with ripe plantain. I just went to their website to see if I could find it there to share with you, but no luck. It went something like, pound the boneless chicken breast flat and season it. Put two tablespoons of mashed ripe plantain in the middle of it and then roll it up and bake it. My Jamaican friend who was watching it with me, said, good idea, that looks like it takes nice! Wish I could give you more of the details, but I wasn't paying too much attention to the details. But you get the concept of it.

just zap di plantain in di mikal wave. slit di skin and nuke it for about three minutes and you done.

that is probably more like boil plantain? which is not my favourite..me woulda radda bake it.

But is it still as sweet? I haven't found any way but frying where they come out so soft and most importantly SWEET!

Why would the sweetness change Serenity? You either have a ripe plantain or you don't.

Tillerina, I have been craving plantain all week long because of this thread

I went to the Indian store to get some but the place too pack up so I put down my pretty plantain and went home empty handed.
