is a fish daht mi want to fix tomorrow, but it look like mi gwine haffi do di tried ahn true and see how it come out...since mi naw get any ideas from anybody...sigh.

Corvina with Garlic Butter

clean fish using lemon and vinegar

fillet of Corvina
chopped garlic
butter
salt to taste
white/black pepper pepper to taste
chopped fresh parsley
wedge of lemon
fling in some jamaican seasoning etc, fresh thyme
dash of sparling white wine (not dry)


Salt and pepper the fish fillet on both sides along with the additional jamaican season. Melt the butter in a skillet and cook the fish until done, about 3 to 4 minutes on each side. Remove the fish and add the chopped garlic and other seasoning. Cook gently over medium heat until soft, but not brown, pour the wine in last Place the fish on a plate and spoon the garlic butter over it. remove the other seasoning.Sprinkle some fresh chopped parsley and serve with lemon or lime wedges.

Miss ILP being as how I do not like my fish looking white when cooked I incorporate some other seasoning. I use Wonder chuck Fish season or any other type of brown fish season...liquid that is. Also the above recipe the Mr. uses crushed allspice (pimento seeds) mix it with other jamaican seasoning when you making the gravy.

Also after removing the fish from the pan, when making the sauce I put the fish back in for an additional 1 min when him not looking....delish. btw me also throw in likkle scotch bonnie pepper delish just mek sure it doan ova cook.

edit to add that we wash the fish using lemon and vinegar, being as how me doan want to be accused of being tekking the fish straight from package and cook it.
