the real authentic jerk seasoning

Please please please,can anyone tell me how to do jerk chicken the proper way,whatever i do I can never get that taste that I get whenever I visit the rock.
I googled it but I get a million and one different ways and it just get confusing,I am having a barbecue soon and need that recipe man,..who on here can talk de tings dem bout the recipe.

This is a recipe that was given to us in jamaica by jamaicans who make their own sauce or you can just use Walkers Wood Jerk sauce here goes...the boyfriend is the cook not me

Recipe

onion grated
green onions or jamaican escallio finely chopped
Scotch bonnie peppers finely chopped
garlic cloves finely chopped
five-spice powder
allspice berries coarsely ground
coarsely ground black pepper
dried thyme/fresh thyme crumbled
freshly grated nutmeg
salt
fresh ginger grated
sugar
cinnamon
cup soy sauce
vegetable oil

In a food processor combine the onion, green onions/scallions, scotch bonnie pepper, garlic, five-spice powder, allspice, pepper, thyme, nutmeg, ginger and salt,sugar, cinnamon process to a coarse paste. With the machine on add the the soy sauce and oil. Pour the marinade into a large, shallow dish, add the chicken and turn to coat. Cover and refrigerate overnight.

He lets the chicken get back to room temp fore he puts in the oven....cook a bit then he puts on <span style="font-weight: bold">Coal</span>barbecue grill he refuses to use a gas barbecue for the final jerking of chicken. Baste with the jerk sauce while grilling

btw I have heard him say and do this, that after washing the chicken in lemon and vinegar he further soaks in sea salt rinse again then place the chicken in the jerk sauce. Hope am making sense here, when I make jerk chicken I just wash it and use the jerk sauce but can never get it tasting like his.

Also we have some pimento wood chips that he guards with his life we got away with bringing this back from Jamaica. He sprinkles the allspice berries/pimento and pimento wood chips on the coals when he is doing his jerk chicken.

what do you use when you try?
how long do you let it sit for and are doing it in the oven ar outta door pan de bbq as you say here?


I just use a combination of walkerswood and the powder jerk.
I also juke holes in de chicken for de seasoning to get down into de meat. (I now do a wicked veggie jerk pasta and a jerk chicken pasta)
mi figget seh mi bring pimento seeds from yaad weh mi grind up an use dat pan it tuh (cah mi naah nuh pimento wood ar chips roun here)
I let dat meat sit at least over night, sometimes two, and have for 3 b4 as well.
When dat deh put on de bbq ppl a guh ahx yuh is how yuh dweet.

When I had a sh!tty bbq which would alwasy flare up I used to just put it on the bbq fi a likkle while to get de smoke flayah inna de meat den put it in de oven and fully cover it wid foil leaving a small air gap fi de steam to come out.

Next time in JA go to Boston weh dem man deh cook up de jerk and buy de seasoning, it is de bess seasoning out deh. But yuh cyaan let dat sit ova night, 3 hours max.

NEutry - Like others have said - I love the taste of the Walkers Wood jerk seasoning if you can get it close by you there... I also stock up on Boston jerk seasoning whenever I go home and that has a nice flavor as well.

For one chiken here is what I do

Prior to putting on the Jerk seasoning...

I cut up at least 10 stalks of escallion in the chicken ( I don;t like to use onions they detract from the authentic jerk taste)

at least 5-6 cloves of garlic (depends on personal taste)

Season with salt, little black pepper, little msg (for taste)

rub all that together

add some pimento seeds

now use about 2-3 tablespoons of the Walkerswood jerk seasoning and rub it in well (quantity depends on how hot you want it to be)

I pour a little olive oil over it to moisturize the meat and let sit for about an hour.

I put it in the oven at 350 for about 1-2 hours covered - or until cooked through

place pimento wood chips soaked in water on side of grill wrapped in foil (if gas grill) or cook wood if charcoal grill

place chicken on grill just long enough to brown.

If you decide to cook all the way in the oven...

FIRST place oven at 500 degrees and place chicken in oven uncovered... by the time both sides are browned the chicken is almost cooked...

cover with foil and reduce heat to 350 and cook until well tender.
