This is what brings people to my house each weekend in the Summer. Enjoy ... no substitutes!
3 cups fresh mint leaves
9 tablespoons sugar
1.5 cups rum (I use Cana de Flor aged white rum from Nicaragua)
0.5 cup fresh lime juice (juice from about 4 juicy limes)
crushed ice
club soda (to your taste. I find about half and half work well)
Reserve 6 mint leaves for garnish. Cut up 6 lime quarters for garnish.
Place remaining mint leaves in a large bowl. Add sugar. Using a pestle or wooden spoon, muddle the mint with the sugar until mint is aromatic and oils are released.
Add rum and lime juice and stir until sugar is dissolved. Strain into a pitcher. (Can be prepared 2 hours ahead. Refridgerate.)
Fill each glass with ice. Add mojito mixture to half glass. Then add enough club soda to fill glass.
