Yendi Phillipps is now a food judge? Well, not exactly. The statuesque model, former Miss Jamaica and television host will appear on the Food Network tonight at eight o' clock where she judges two servings of escoveitched fish. Phillipps dishes the details on her appearance.

What's the show all about?


'Throwdown', with Bobby Flay, is one of the top television shows on the FOOD Network. Bobby Flay is a world renowned chef who owns multiple restaurants in New York City. Someone is secretly selected and they have a bit of a face-off challenge with him. My role on the show was to judge the selected 'throwdown dish', which was escoveitched fish, hence my involvement: Jamaican girl judging Jamaican cuisine.

Marinated Fish - Escabeche de Pescado
From the islands, an exquisite fish, marinated with spices and escabeche sauce.
Ingredients
Escabeche Sauce:
1 cup Goya Extra Virgin Olive Oil
1/2 cup Goya Vinegar
6 o 7 grains pepper
1/4 tsp salt
1 bay leaf
3/4 lbs. onions sliced
1/4 cup Goya Pimientos
1/2 cup Goya Stuffed Olives
Fish and frying ingredients:
1 1/2 lbs. red snapper sliced
2 tbsp Goya lemon juice
2 tbsp Goya Adobo
Flour
1/2 cup Goya Extra Virgin Oil
1/2 tbsp Goya minced garlic
Directions
1. Combine the ingredients for the escabeche sauce. Simmer 45 minutes. Let chill.
2. Clean the fish and sprinkle with salt and lemon. Smear fish with flour. Heat a pan with garlic and fry fish until brown/gold.
3. Pour the escabeche sauce on a plate and place fish slices over sauce. Cover with more sauce. Follow the same instructions with all the slices.
4. Let cool, refrigerate 24 hours and serve cold.

Well Bobby fish looks good gonna try it this weekend with shrimp but that's not escovitch fish.

the other S american countries that make the escabeche, their recipes are more "wetty wetty" with more lemon juice and cilantro, so is not quite the same to me, they usually use more cilantro too mi notice (although every one has variations on the escabeche)

That's been my experience too.

It nuh bad. But it isn't close to the ja one.

I was so sleepy last night, I set the dvr. Maybe I will watch the show later tonight.

..i just realised i've had food from the brooklyn mobay (it's closed now). I was not impressed...i ordered two entrees..fish/oxtail...both were completely oversalted..
