So, I've never really been a fan of rum punch over the years. Mostly because what I tasted was never quite right. I have made two or three attempts and making Jamaican Rum Punch but it never came the way I wanted. So I consulted with two experts: my mother and Enid Donaldson's book. You know what? This old ditty about rum punch is exactly on target!
* one part sour (lime juice)
* two parts sweet (sugar)
* three parts strong (rum)
* four parts weak (fruit punch)
I followed the recipe to exacting portions. I used fresh lime juice, brown sugar, Appleton Overproof White, Allen's Tropical Fruit Punch and some pineapple juice. Then I put a few Allspice berries (pimento seeds) in the mixture. Let it sit for a few days.
I am tasting it now
and it is taking me back to Christmasses long ago when, as children, we would sneak a taste of the rum punch when the adults weren't looking.
