<span style="font-family: 'Comic Sans MS'">This may deserve a separate thread. I like to brine chicken before I roast or bbq or any kind of cooking. It makes chicken taste better to me and gets rid of that "fowl" flavor that bothers me with some chicken. That's because brining removes the blood from the chicken. I sometimes use kosher chicken (don't need brining) when it is on sale.
