Cornmeal and potatoes are substututed dependoing on the flavour, but never use grated bananas. My kids loves it. Every so often they will call me and ask me to make it .

Blue draws used to be made by home made corn meal not the store bought one. People who plant corn would take the dry corn still in the husk; take the husk off, boil them and then drain them and grater them (like cassava). The next step would be to sieve the contents and you now have corn meal you to make blue draws; cornmeal dumpling, or cornmeal porride. This is how I remembered they used to make blue draws say about 50 years ago. Now I don't believe anyone does that anymore but that cornmeal dumpling with ackee and salfish and corn poak was to die for. In my part of the country it was called &quot;tie-a-leaf&quot; not blue drawz.

Ok, the only two on that list I have not tried so far is the escovitch and gizzadas.

My favorites are the traditional jerk chicken and rice and peas.
