CAPRESSE SALAD

4 large Tomatoes fresh, juicy
4 tablespoon Extra virgin olive oil
1 1/2 tablespoon Balsamic vinegar
1 package Fresh mozzarella cheese packed in water
16 leaves Basil sliced
Salt and fresh ground pepper to taste

Slice tomatoes about one quarter inch thick and arrange on a plate. Slice thin discs of mozzarella cheese and place on each tomato. Top with a sprig of basil. Mix olive oil and balsamic vinegar (or just use Newman's Own Balsamic Dressing&quot;. Pour over tomatoes. Add salt and pepper to taste. Serve

I always think of my grandfather when I eat juicy, ripe tomatoes

he would put the salt &amp; pepper shakers in his pocket, hand me a couple of cubes of sugar and out we'd go to the garden ... nothing better than a tomato fresh off the vine, warm from the summer sun (grandpa's with a shake of salt/pepper and mine with a sprinkle of sugar) ... although I grew to dislike sugar on tomatoes many, many years ago

once in a blue moon I'll get a taste for some sugar on a tomato

ahh but the best are cherry tomatoes from the vine. and dem grow plentiful too, nice anecdote chi.
