Basa. my goodniss i got some steaks with the skin on. it was most delightful.
6 basa steaks
1/2 cup chinese cooking wine
1/2 tsp. cajun seasoning
1 tsp. cayenne pepper
1 tblspn. thinly diced onion
combine everything together and let it steam with cover on checking to make sure the liquid doesn't dry out.
if it starts to dry, then add a little water, or chicken stock depending on your tastes.
i almost had a stroke.
