soh smaddy pan yah dih goh tell mi seh basa a catfish. now mi have di sitt'n a look mi raw yeye and mi noh wan heet it. how do you prepare catfish.

never soaked the catfish or basa in milk

i usually fry (american) catfish - it is an oily fish and needs some of that oil fried out of it - i usually prefer catfish "nuggets" instead of the catfish filets

basa i have pan sauted with onions, peppers and seasonings, i have also grilled it (depending on the thickness) and i have also broiled it in the oven

thanks for that bit of advice seveen. mi is a fish lover and i like to experiment, sometimes with disasterous results, so your suggestion is much appreciated.

hot sauce! after cooking

most of the catfish is farmed raised and doesn't taste muddy at all

hot sauce check. the one weh mi dih mek above with lots of cayenne pepper was a big hit with one and all. sometimes i blunder on the side of sheer genius, if i do say so myself.

an hour-long soak in buttermilk will remove the muddy taste
