For those of you interested....
1 pound of crab meat (Not that pink and white imitation crap...check Whole Foods or any other high end store)
3/4 cup of mayonnaise
2 tablespoons of old bay seasoning
2 eggs
1 onion finely chopped
1.5 cups of Panko (Japanese breadcrumbs)
1. Combine all ingredients (except the crab) in a large bowl. Only use 1/2 cup of the panko. You will need the rest for breading.
2. Once combined, fold in the crab meat making sure to keep nice chunks.
3. Spreads the remaining panko in a large flat dish. Form the mixture to your desired size and bread with the remaining panko. Be sure to coat each patty completely.
4. Refrigerate for about 3 hours so that they patties can form.
You can either fry or bake them.
