To chop or mince fresh oregano: Holding the stems, gather the leaves into a tight, compact bunch. Using a chef's knife, cut across the bunch to chop the leaves coarsely. Discard the stems. To mince, gather the chopped leaves. Steadying the top of the blade, rock the knife in an arc until desired fineness is reached.

Store fresh oregano in the refrigerator, wrapped in paper towels and enclosed in a plastic bag.

Thyme possesses potent antimicrobial properties and a muscle relaxant effect. It also assists in thinning mucus in the lungs making it easier to expel. These properties make Thyme a wonderful holistic remedy for respiratory conditions, such as colds and the flu. Infuse up to 1 tsp. dried thyme leaves or 2 tsp. fresh leaves in boiling water; drink 2-3 cups per day.

Strip the thyme leaves from the stems and use fresh to add to your favorite entrees. Harvest handfuls of the stems and tie small bundles together. Hang them upside down in a cool, airy room to dry.
