8 oz. dry gungo peas from package
water
2 medium yellow onions
3 peeled garlic cloves
1 fresh mexicali pepper (flavorful with little heat)
2 mediam potatoes, peeled, finely cubed
sliced baby carrots
two sections smoked turkey wing
1 box chicken stock (standard size)
thyme leaves
1 bay leaf
flour and water to make dumplings later
The night before serving, put peas in saucepan, cover with water, bring to boil. Turn off heat then let stand for about an hour.
Chop onions, garlic, pepper. Put in crockpot. Add potato and carrots. Add smoked turkey. Add soaked peas, thyme, bay leaf. Add chicken stock and/or water to just cover everything in crock pot. Turn crockpot on to High setting. Cook overnight, 8-10 hours.
In the morning, remove turkey bones and skin from soup. Make spinner dumplings and add to crockpot. Stir. Continue to cook on High setting for 2 hours. Turn crockpot on Low setting until ready to eat later that afternoon or evening.
Notes: The finely chopped potatoes and dumplings thicken the soup. No need to add salt as smoked turkey and chicken stock are salty. Add your own pepper version. Left over stored in fridge will thinken soup. Enjoy.
