Ingredients
7 or 8 black tiger shrimp
1 tbsp. lemon and lime juice
1 tsp. freshly ground black pepper
1 tbsp. olive oil
3 tbsp. mayonnaise
2 chipotle peppers
Green onions, for garnish

Directions
Remove the tails from the shrimp, skewer them in the centre and place them in a mixing bowl. Add the juice, oil, and salt and pepper to the bowl and toss together. Fire up the grill and cook the shrimp for about two and a half to three minutes.
To make the chipotle aioli, add the mayonnaise and peppers to a mixing bowl and quickly mash together. Add to a ramekin or other small dip bowl.
On a serving tray holding the aioli, place the grilled shrimp onto a bed of thin green onions.
