Recipe for Fry Chicken Sauce

Okay anyone know how they make the sauce for the fry chicken in Jamaica.

I check the homepage and did not see it.

<span style="font-weight: bold">Fry Chicken Sauce/Gravy</span>
<span style="font-style: italic">Based on one broiler cut up and fried</span>

After you fry the chicken, drain and place in warm oven.
Pour out or discard all but 1/2 cup of oil you fried the chicken in.
1/2 cup flour
1 medium yellow onion
1/2 green pepper
1 teaspoon of fresh thyme leaves or 1/2 tsp. dried.
2 cups chicken stock or water
1/4 cup ketchup
1 Tbs. soy sauce
1 tsp. Pickapeppa sauce
salt to taste

Over medium heat in sauce pan, add oil and stir in flour with whisk to make a roux and brown until milk chocolate color. It will brown quickly so be careful.

Add onion, pepper, thyme and stir until onion gives off flavor.

Whisk stock with ketchup, soy sauce, and Pickapeppa. Add to sauce pan. Turn heat down to low, cover, and let simmer. If sauce thickens too much, add more stock or water.

Cook until onion is translucent. Add salt to taste (may not need it!)

Variations: add one whole scotch bonnet pepper to once sauce begins to simmer. Then cook until you smell the scotch bonnet flavor and be careful not to burst pepper
