Grandma2 shared this with me several years ago and it is what I make every christmas seeing that I am challenged in the baking department........it easy so till.
Appleton Special Rum Cake
1 cup chopped pecans
1 (18oz) pkg. yelllow cake mix
1 (4 0z) pkg vanilla instant pudding
4 eggs
1/2 cup of cold water
1/2 cup cokking oil
1/2 cup Appeton Special Rum
Glaze
2 oz. butter
2 oz. water
1/2 cup white sugar
1/4 cup Appleton Special Rum
Preheat oven to 325F. Grease and flour a 10" tube or Bundt pan. Sprinke nuts over bottom pan. Mix all cake ingredients together - batter will be runny,. Pour batter over nuts. Bake about 1 hour. Cool. Invert on serving plate. Prick top.
Glaze
Melt butter in saucepan. Stir in water and sugar. Boil 5 minutes, stirring constantly. Remove from heat and stir in rum. Drizzle glaze over top and sides, allowing cake to absorb glaze. Repeat until all glaze is used up.
(This cake freezes well. Can be made in 2 loaf pans which makes it easier to slice and serve).
