lawd jezaz!!! what a thing. i just got some at marcello's. it's the best thing in the world. i think they battered it in cornmeal.

i'm so eggstatic right now.

better get the year end billings out.

merciful fawda. mi feel fi bung mi gut pan dem, but i only got two pieces caz i was scurred, it being marcello's and all.

see one recipe wid flour

1 egg
a pinch of salt
corn oil for frying
2 to 3 tablespoons of milk
1 tablespoon of brown sugar
6 tablespoons of all purpose flour
1 large or 2 medium ripe plantains (cut diagonally into 1/2 inch thick slices)

First mix the milk, egg, brown sugar, flour along
with the salt till its nice and smooth. In
a large size skillet heat the oil over
medium heat.

Dip each of the plantain slices into batter
and drop it right in the oil. Fry it until
browned for about 2 minutes on each side.

Drain plantains right on the kitchen paper
towel and serve the plantains hot, warm or
at room temperature.

one more wid flour

4 ripened plantains
1 egg
1/4 cup flour
2 tablespoons buttermilk
2 tablespoons brown sugar
Pinch of salt
Vegetable oil for frying

In a medium bowl, whisk together the egg, flour, buttermilk, sugar and a generous pinch of salt.

Slice the plantain diagonally into slices about 3 inches long, and about 1/3 inch thick.

Place the plantain slices into the batter and stir to coat them.

In a heavy pot, deep skillet, or deep fat fryer, place the oil to a depth of about 2 inches. Heat over medium-high heat to about 350 degrees, or until a drop of batter sizzles well.

Cook the plantain in the oil (in batches if necessary) until golden brown, about 3-4 minutes. Drain on paper towels and sprinkle with salt.


<span style="text-decoration: underline">Peanut sauce</span>:

1/3 cup peanut butter, softened
3 tbsp water
2 tbsp soy sauce
juice from 2 limes
1 tbsp fresh minced ginger
1/2 tsp brown sugar
1 clove garlic, minced
1/4 tsp red pepper flakes, or to taste
salt to taste

Whisk together all ingredients in a small bowl. If needed, you can microwave the peanut butter for a few seconds first to soften it up.

you're definitely not jamaican. a certain smaddy who is a driven as the ice rink after the zamboni machine got through with it, absolutely adores it. and ackee and saltfish too!
