I baked 3 home made pumpkin pies yesterday, using a big beautiful fresh pumpkin from a friend's garden. They all turned out beautiful. Once they were out of the oven, I turned around and saw 2 small bottles, one rum cream & one brown cow, that I had purchased at the shop that morning & decided to add a twist to my pies.
I poured both bottles into a small sauce pan, on low heat, stirring with a wooden spoon, reduced it and then added about 1/4 tsp of cornstarch to it. It was a smooth creamy texture (but not thick) & while it was hot I poured it onto the pies. After about 1/2 an hour, much of it had been absorbed and it left a creamy layer on top. I had made 6 little pies in a cupcake tin, with the left over filling, so last night I ate one of them. Let me just say, it was heavenly. A little Jamaican twist to an already Jamaican pie.
