that should only be eaten in restaurants?...i bought some skate fish and now me fraid fe cook it...it look so delicate

they taste like wild scallop. i cooked it before, but i'll never cook it again. i breaded it. i'm sure a <span style="font-weight: bold">professional</span> cook would have done it better. maybe it was the first time for me cooking it, but i didn't like it that much.

after I purchased it..i ordered it in a restaurant just to get an idea of how it should taste...it was lightly breaded..but i'm not one for breading..and I can't seet been sauteed..mebbe me we just fry it up..but not for long...bet it'll taste like rubbaComment

Why don't you just squeeze some lemon on it with a little olive oil, & white wine....meanwhile, saute some fine, seasoned breadcrumbs in butter & chopped garlic. top the fish with the breadcrumbs & bake at 350 for maybe 20-30 min., depending on how thick the filets are. that fish might be too delicate to be heavily seasoned.Comment

alright JaJ...i'll cave and get somebreadcrumbs /o\..thanks for suggesting the baking..now that i think about it that's probably how the restaurant cooked it..

One of the ways I cook snapper filet (I've learned how to filet it myself, since a guest brought a filet knife for me), is to melt some butter& olive oil, lemon & white wine...pour over fish in pan, then saute the seasoned breadcrumbs(add oregano & parmesan cheese) in butter & garlic, chopped fine.
Top the filet with the breadcrumb mixture & bake.
I love the limes in Jamaica but am always on a hunt to find lemon, because it's really a different flavor and I use it nuff in my cooking, if I can find them.Comment

I did get one from someone that was SUPPOSED to be a lemon tree....it's about 3 1/2 ft. tall now and I've yet to see any lemons, or even blooms, for that matter!.....something is eating all the leaves on it now too!....battling the insect population here is a real biach!!
