I have/am cooked/in the process of cooking the following...in anticipation of guests, weather dem come or not ...well...

Chili (turkey)
Beef Stew
Rice and Peas (but mi neva have Red Kidney Bean so mi use White Kidney Beans)
Sheppard's Pie (wid Bison meat)
Spinach Dip
Chicken Noodle Soup
Green Beans
Pound Cake (mi haffi mek ah next one cah di one mi bake yessidey done already )
Corn Bread (Twiney...it betta be good )
Bitter Ghiradelli Chocolate Baking Chips (right out of the bag for me)
Wine
Beer
Coffee
Tea
Water (<---mainly for me )

ETA: Lawd mi figet bout di:
pistachios
pineapples
nacho popcorn
peanut (not a fan of the fact that they are still in the shell )

My menu is based on dishes that are representative of the cities whose teams are playing today, while using as much local food as I could find....

New Orleans was easy; I grabbed one of my Cajun cookbooks and came up with this...

I found a recipe for marinated shrimp, but there's not too many shrimp caught around here ...so I substituted scallops, marinated with lemon, olive oil, rice vinegar, hot sauce, olives, local honey and onions....

fish chowder: cod, potatoes, parsnips and celery root...

mushroom and artichoke casserole...the 'shrooms are local, the chokes aren't...

Indianapolis was a little more difficult... the Hoosiers are not known for their contributions to the culinary arts ....but give thanks for the www... I learned that almost every bar, diner and greasy spoon in Indiana has a fried pork tenderloin sandwich on the menu....they're usually about a quarter pound of tenderloin, pounded flat, breaded, fried and served on a hamburger bun....I decided to slice mine smaller and serve them on a dinner roll; imagine a pork slider....

I'll be cheering for the Saints, but I think the Colts will win 31-24...

I am sick and they dont really want me near them so the best I can offer since I dont want to stay in the kitchen with my cough is:
baked potatoes done in the microwave
shake and bake chicken
salad
banana bread
cherry vanilla icecream
water and fruit juice

this one is simple:

Saute garlic, one cup chopped onions and one pound sliced mushrooms until onions are tender...

add 2 cups quartered artichoke hearts, 2 tablespoons lemon juice, 1/2 cup white wine...stir...

season with salt and hot sauce ( or cayenne pepper)...

turn into a greased casserole dish....

mix 1/2 cup grated cheese (eg: Romano or Parmesan) with 1/2 cup bread crumbs...sprinkle on casserole...

bake at 350...30-40 minutes
