This is an easy & almost effortless chicken dish that I fixed last night, since I have a wicked cold & didn't feel like doing much....quick & easy!
1 whole chicken...wash with lemon and leave it in the juice. Add a generous amount of olive oil, fresh or dried rosemary,garlic (several smashed cloves) salt & pepper....rub the chicken with the seasoning & put into a baking dish, along with all the juices.
Cover with foil & bake at 375 for about 1/2 hr., remove foil and reduce heat to 350, then bake till nice & brown & tender.
Remove chicken from baking dish & add a little flour to pan drippings to make a luscious gravy with a lemony touch.
I served it with baked potatoes but would also be nice with rice or pasta.
