Fruit Salad

Okay, mi love ambrosia fruit salad (making it and eating it ), but I think its time to try other fruit salads. Anyone have a good fruit salad recipe to share aside from ambrosia fruit salad?

Oh yes, I had scrolled through the 'best of cooking' forum and I tried Grandma2's glazed fruit salad, and it was aiight, but did not enjoy it too much. I guess it's just that I do not care too much for tapioca.

I don't like anything but fruit in my fruit salads. I mix seasonal fruits paying attention to color, shape, and sweet and tangy combination. Maybe I'll add a bit of fresh mint leaf and serve it on a leaf of Romaine lettuce. But das it.

I have a problem though. I do not care much for fruits in this country. The only fruits I will continue to eat are banana, pineapple and grapes. MI noh know, I guess mi still biased with the Jamaican fruits. mi miss mi starapple, sweet-sop, fi wi home grown mango, guinep etc. I just can't get into fruits grown anywhere but JA. I don't even care for the mangoes here.

So when I eat a whole heap of american fruits, I usually have a yogurt fruit dip to enhance taste.

I dont have any fancy fruit salad recipe-I just cut up & eat those in season...

I had a watermelon with goat cheese salad somewhere one time and it was heavenly. I plan to make it in the summer time. Mek mi google it fi yu

GRILLED WATERMELON SALAD

1 small seedless watermelon, cut into 8 slices (about 5 lbs.)
2 Tbs olive oil
salt and pepper
2 bunches watercress, trimmed
2 Tbs balsamic vinegar
1 cup crumbled goat cheese

1. Preheat grill.

2. Brush watermelon slices with oil. Season with salt and pepper. Grill watermelon 1-2 minutes on each side.

3. In a medium bowl, toss watercress with vinegar. Season with salt and pepper to taste. Set aside.

4. To assemble, sprinkle each grilled watermelon slice with goat cheese. Top with watercress mixture.

Servings: 8

Really enjoyed this. I didn’t have watercress, so I made it with romaine- the staple green in our household. It still worked, although I can see how the slightly bitter watercress would complement the watermelon’s sweetness nicely. I’m sure I’ll make it again, and I was thinking that, if I use mild greens, adding very thin slices of red onion would perhaps add that zing. The only critique I have of the recipe is that it would be more helpful if you specify the size of each watermelon slice. But I loved it and I’m happy I found it!

Never heard of grilled watermelon before. I am in one adventurous mood so I will give this a try! Hope the folks around me like it!
