<span style="font-weight: bold">Ingredients</span>
6 boneless pork loin chops (5 ounces each)
2 teaspoons canola oil
1 cup uncooked long grain rice
1 large onion, sliced
1 large green pepper, sliced
1 envelope pork gravy mix
1 can (28 ounces) diced tomatoes, undrained
1-1/2 cups water

<span style="font-weight: bold">Directions</span>
In a Dutch oven, brown pork chops in oil on both sides; drain. Remove chops. Layer rice, onion and green pepper in Dutch oven; top with pork chops. Combine the gravy mix, tomatoes and water; pour over chops. Cover; bake at 350° for 1 hour or until a meat thermometer reads 160°. Yield: 6 servings.

<span style="font-weight: bold">A Southwestern One Pot Recipe: Roasted Salsa Chicken with Red Beans</span>
• 1 cup roasted tomato salsa
• 1½ cups basmati rice
• 2 cups chicken broth
• 1 pound skinless boneless chicken thighs
• 1 can 15 oz pinto beans
• Salt
• Pepper
• 2 tablespoons extra virgin olive oil

In a large saucepan, heat the olive oil. Add the chicken thighs and sprinkle with salt and pepper. Brown for 3-4 minutes till brown and change sides and repeat the process. Add the tomato salsa and sauté on medium heat for 5-6 minutes. Add the beans and rice and sauté for a minute. Add the chicken broth and salt to taste. Bring the broth to a boil and lower the heat all the way and cover with lid. Cook for 20 minutes or till done. Check for seasonings.

<span style="font-weight: bold">Roasted Tomato Salsa</span>

• 3 cups cherry tomatoes
• 1 medium onion, chopped roughly
• 3 garlic cloves, unpeeled
• 2 tablespoons olive oil
• 1 lime, juiced
• 1 lemon, juiced
• 2 teaspoons salt plus more to sprinkle
• 1 teaspoon ancho chili powder
• 1 teaspoon smoked paprika
• ½ cup chopped cilantro

Preheat oven at 400 degrees.
Spread the tomatoes, onion and garlic on a lined cookie sheet. Drizzle olive oil and salt on the vegetables and roast for 30 minutes till the tomatoes begin to burst and the onion and garlic are golden brown. Transfer the mixture to a food processor. Add lime and lemon juice and process till smooth. Add the 2 teaspoons salt, ancho chili powder and paprika. Pulse a few more times ensuring everything is mixed well. Take out in a bowl and check for seasonings. Add the chopped cilantro and serve with chips. Makes a little over 2 cups, enough for the salsa chicken and chips!

I'm wondering why the seafood should be ground up....or maybe just the conch??

&quot;Low&quot; doesn't belong anywhere in the description of this one. You know whenever you see cream, it's already headed for the high end of calories.

I have only used shrimp and lobster to make it. I think the price of lobster is way to out of hand though so that was only once I was willing to work up two cups.

I don't technically grind it up like I was trying to turn steak into ground beef. I do chop it up well and I I thrink it gets all up and through the sauce better that way when it bakes. No bite is without seafood.

I believe in making a recipe my open though, so I would say if you want to put whole shrimp or crawfish or what not then it would still be good.

<span style="font-weight: bold">CHEESY CHICKEN &amp; RICE CASSEROLE</span>

1 can cream of chicken soup
1 1/3 cups water
3/4 cup uncooked rice
1/2 tsp. onion powder <span style="font-style: italic">(I use sauteed onion)</span>
2 cups frozen mixed vegetables <span style="font-style: italic">(I use raw broccoli &amp; carrots)</span>
4 skinless, boneless chicken breasts <span style="font-style: italic">(I've used bone-in also)</span>
1/2 cup shredded cheese <span style="font-style: italic">(I use approx. 1 cup sharp cheddar)</span>
black pepper - to season chicken (you can use whatever spices you'd like on the chicken)

Stir together all (but seasoned chicken) in shallow baking dish. Lay chicken on top.
Bake at 375 for approx. 50 min. Top with cheese and let stand for 10 min. Serves 4
