LMAO @ Jazz. The girl singing hymns to hold her peace. That must be some god awful rice.

I cooked this one last night. I know folks either love okra or hate it, but I'm on the love list. I used fresh okra because the frozen doesn't work out right to me in this dish. Also I used olive oil instead of butter.

<span style="font-weight: bold">Cajun Shrimp Casserole</span>

Ingredients
* 2 pounds peeled and deveined large fresh shrimp
* 1/4 cup butter
* 1 small red onion, chopped
* 1/2 cup chopped red bell pepper
* 1/2 cup chopped yellow bell pepper
* 1/2 cup chopped green bell pepper
* 4 garlic cloves, minced
* 2 cups fresh or frozen sliced okra
* 1 tablespoon lemon juice
* 1 1/2 teaspoons salt
* 1 (10 3/4-ounce) can cream of shrimp soup
* 1/2 cup dry white wine
* 1 tablespoon soy sauce
* 1/2 teaspoon cayenne pepper
* 3 cups cooked long-grain rice
* 1/4 cup grated Parmesan cheese

Melt 1/4 cup butter in large skillet over medium-high heat. Add onion and next 3 ingredients; sauté 7 minutes or until tender. Add garlic, and sauté 1 minute. Stir in okra, lemon juice, and salt; sauté 5 minutes. Add shrimp, and cook 3 minutes or until shrimp turn pink. Stir in soup and next 4 ingredients until blended. Pour into a lightly greased 11- x 7-inch baking dish. Sprinkle evenly with Parmesan cheese.

I made this last night. A friend had given me farm-raised cat fish fillets and so I forced myself to cook and eat it . They taste great!

Fish Fillet and Callaloo Casserole</span>

3 cat fish fillets
3 tsp. Old Bay seasoning
1/4 cup mojo-criollo marinade
1 can callaloo well drained
1 large potato, peeled and thinly sliced

Season fish fillets with Old Bay and marinade and let sit for at least one hour. Line bottom of baking dish with potato. Put fish fillets on top of potato. Spoon marinade on top of fish. Spoon callaloo around fish. Cover dish with foil. Put in pre-heated oven 350 F for about 30 minutes.

Remove from oven. Let sit for about 10 minutes.

6. Bake, covered, at 375° for 30 minutes; uncover and bake 15 more minutes or until bubbly. </div></div>

Unusual Results.. The picky eater loved the meal and the one who loves pasta did not like it
