shrimp wid some campbells mushroom soup~~

or just plain scampi, wid seasoned oil and nuff garlic powder~~

we went to a cuban restaurant the other day, and dem had curry shrimp, wid veggies, annd in the middle was a moundful of yellow rice~~ hmmm,

Saute at least 4 fresh garlic cloves (chopped fine) in 1 stick butter (1/4 lb.)....throw in nuff peeled & deveined shrimp....saute till pink. Throw in a splash of white wine (dry) and the juice of one lemon....simmer for a few minutes. Serve over linguini. That's how I make scampi.

OR make a marinara sauce with sauteed garlic (nuff), 1/2 sweet pepper, cut in fine strips along with 1 onion,& 1 scotch bonnet, sauteed in a couple TBLSP> olive oil.....add I lg. can whole plum tomatoes (break them up before you put them in the pot) and 1 sm. can tomato sauce....add either nuff fresh basil (betta dat way) or at least a tsp. of dry basil, 1/2 tsp. oregano, pinch of salt, pinch of sugar & black pepper to taste.....simmer half covered to reduce & thicken....add shrimp & cook till pink....voila!, "shrimp Fra Diavlo'!! Serve over linguini or spaghetti with nuff grated Reggiano or parmesan. I prepared this last night & everyone was happy!

tulip - look again nuff shrimp in the pasta

since i used frozen shrimp (didn't thaw them ahead of time) - i sauteed before adding to the pasta - didn't want to add too much water into the mix and i didn't want the shrimp to cook too long

Girl! That's even better! I think I got stuck on the asparagus which I love. So where you say you live? Please don't be in Canada cause my plate gone be cold by the time I get there.

Ok, I think this presents a problem lol. Now if I was one for making plans, can we have a do-over in August? If I am going to almost sweat to death at least I can eat good.

Side note: I choose sweating over frostbite.

Family favourite recipe for shrimp;

Butter the bottom of a baking dish/pan&quot; cover the bottom with peeled, deveined shrimp -the larger the better- cover lightly with extra sharp cheddar then top that with a layer of bread crumbs.
Melt about a quarter-1/2 stick of butter in a pan and add a clove of FRESH mashed garlic and NOT garlic powder . Cook over low heat for about two minutes allowing the butter to pick up the garlic flavor.

Drizzle it over the crumbs and bake in a preheated 350F oven for about 20 minutes then broil until browned on top watching carefully so it doesn't burn.
If it does burn just brush off the burned crumbs and it will still be nice.


This recipe works great with just about any fish fillet too although I personally would cut out the garlic.
