but mi love di fresh one weh you buy fram di fishaman.
oonu know 'merican waters not in di best condition ahn fullup of all kinna tings (ie. mercury).
di diet weh dem give mi seh if mi muss eat di tuna mi fi eat canned (chunk light tuna to be exact) cah it mek fram a smaller species of tuna, so it dont have di amount of bad tings (ie. mercury).
wah mi can do to di can tings (beside stop eat it) daht can mek it taste like sinting?

How about tuna flittas?...chop up scallion, sweet peppa, scotch bonnet & onion...make the batter same way as always & fry up....can add extra peppas or hot sauce if you like it really hot.

I've seen it cooked here sauteed with onion, scallion, sweet & hot peppers & chopped tomatoes in a little oil & then served with rice.

This is a recipe I grew up with so it's pretty "yankee", but you MAY like it....

1 pkg. macaroni, cooked
1 can tuna
1 can mushroom or cream of celery or cream of chicken soup

chopped onion, sweet pepper ( add scotch bonnet for heat) sauteed in a little oil.

grated cheddar cheese

salt & black pepper to taste.

Mix all together, add a little water if needed, put in baking dish & bake till done (30 min. or so)

Nice to sprinkle some sauteed fine breadcrumbs on top too.

The frittas sound really good.

I sometimes make canned salmon the way you described the sauteed but never used tuna before.

Mi kno cream soup nah appeal to mos Jamaican palate, but have seen recipes posted on the board before with cream soup as one of the ingredient, so thought there was a chance ILP might like it....dats all

AND I HATE CAN SALMON
