Re: Salmon Recipe
This is how I like my salmon cooked.
Roasted Salmon
Preheat oven to 425 degrees
Clean and debone 2 pounds of wild salmon, cut salmon into 6 ounce pieces.
Season the salmon pieces with salt and pepper
Marinade:
Whisk together in large bowl:
• 4 tablespoons of extra virgin olive oil
• 1 ½ tablespoons of balsamic vinegar
• 1 ½ tablespoons of honey
• ½ cup of spicy brown or deli mustard
• 1 tablespoon of cayenne or red pepper flakes
• ½ teaspoon of sea or kosher salt
• 1 clove of minced garlic
• 1 tablespoon of rosemary
Place seasoned salmon pieces in a large zip loc bag; pour all but ¼ cup of the marinade over the salmon.
Set aside a ¼ cup of the marinade
Place zip loc bag in the refrigerator for 1-2 hours
Cover a baking sheet with aluminum foil
Place chilled marinated salmon pieces skin side up on the baking sheet
Place in the oven for about 4-5 minutes to sear the flesh
After searing, turn the salmon over, coat with the marinade you set aside earlier
Return to oven and continue to cook for 20-25 minutes.
Let the cooked salmon rest for a few minutes before serving.
