I love my eggs pretty much every way you can cook them, except over done. I prefer them runny...but another fav is omlettes filled with everything going.

Another way is ...Seafood Eggs Benedict. This is obviously more of a specialty and in Negril at Xtabi they serve the best lobster benedict around! Yummmmm

We usually have it the day after a lobster feed. It's pretty easy with a poached egg, english muffin, seafood and either bearnaise sauce or hollandaise.

Sorry Jambrit, never saw this question till now....yes, I make them myself &amp; also for our guests....seems to be a breakfast favorite!

Right, so it is always FRESH, but even if I wasn't in Ja., I would never use &quot;canned&quot;.....would rather use FRESH spinach or kale or collards than canned anything. To me FRESH is what makes the food taste good!

I just cut up the usual seasoning vegs....scallions, onion, sweet pepper, scotch bonnet pepper, garlic, little tomato &amp; saute in a little olive oil for a few minutes, then add chopped callaloo and mix in thyme, add a few pats of butter, salt &amp; pepper, cover &amp; stir occasionally till steamed. For the omelette, just pour mixed eggs in the pan &amp; cook till almost done, top with cooked callaloo &amp; grated cheddar, fold over &amp; turn heat to low....ready when cheese is melted.
