These are only seasonal and this year in Eastern Canada they are about 3 weeks earlier than usual. We only have them once or twice during the short season...but they are a delicious treat.

Clean them thoroughly and trim the ends. Cook in water till they are still el dente...crisp, then drain them.
I satued them in garlic butter with fresh mushrooms, garlic, green onions and tomatoes and chopped fresh parsley. Add black pepper to taste.
Serve as a side dish to any meal. We had grilled salmon steaks with coconut rice and peas.
