Jerk Seasoning Paste

The Super 88 Chinese supermarket i Malden (Massachusetts) carries a small section of Jamaican products and not long ago I picked up a Walkerswood Jerk Seasoning paste, tried it on chicken and pork cooked over apple wood on the grill and it was just sensational.
I went back for more and all they had left was Grace brand and another brand called Sunrite. The Grace wasn't as good as the Walkerswood by a long shot and the Sunrite was not as good as the Grace.

I went on line and looked at about 50 recipes for jerk seasoning paste and cooked up a couple of variations but neither came out close or as good as the bottled brands I had tried.

So now I am coming to the experts, the master Jamaican chefs, my own Jamaican Julia Childs for help.

Can anyone provide me with a recipe for a jerk seasoning either dry rub or paste that can approximate what Walkerswood sells?

I'm pretty sure you can order Walkerswood online, but not sure if you want to pay the price....I, too, use Wlakerswood exclusively & have found it to be the best, IMHO. In Jamaica, I believe the price works out to about $4 a jar.....considering the amount of work to make it yourself, it is a good deal to me, but again, I'm sure the price must be higher online & then you've got shipping charges in addition.

These are the ingredients listed on the label: scallions,hot peppers,salt, black pepper, allspice, nutmeg, citric acid, sugar, thyme.....really can't give proportions, but you could experiment with the scallions & peppers being the main ingredients in the food processer & then add the other seasonings to taste.

I did go out and buy all the listed ingredients and gave cooking up a batch a try.
While the resulting product was acceptable, it was nowhere like the Walkers Wood product.

I know that there are copycat recipes on line for Kentucky Fried Chicken and other commercially popular foods but I guess jerk is just too small a market to have someone bother making exact copycat recipes.

Scientists COULD break down the exact composition of anything but the cost would be prohibitive.

I'll just keep on experimenting. There are only so many variations and combinations of the ingredients so I figure by the time I'm 95 or so I should be able to get it right.
