The Super 88 Chinese supermarket i Malden (Massachusetts) carries a small section of Jamaican products and not long ago I picked up a Walkerswood Jerk Seasoning paste, tried it on chicken and pork cooked over apple wood on the grill and it was just sensational.
I went back for more and all they had left was Grace brand and another brand called Sunrite. The Grace wasn't as good as the Walkerswood by a long shot and the Sunrite was not as good as the Grace.
I went on line and looked at about 50 recipes for jerk seasoning paste and cooked up a couple of variations but neither came out close or as good as the bottled brands I had tried.
So now I am coming to the experts, the master Jamaican chefs, my own Jamaican Julia Childs for help.
Can anyone provide me with a recipe for a jerk seasoning either dry rub or paste that can approximate what Walkerswood sells?
