Frittata Recipe with Potatoes
Ingredients:
4 medium potatoes, sliced with skins
½ red bell pepper, chopped
Olive oil
4 eggs
2/3 cup milk
1 tsp. garlic powder
1 tsp. salt
½ tsp. pepper
Dash of rosemary
½ cup cheese, grated
Directions:
In a non-stick pan with heat-proof handles, cook the potatoes in olive oil. After nearly cooked through, add the bell pepper. Continue cooking until the potatoes are tender in the middle and crispy on the outside. Arrange them in an even layer on the bottom of the pan.
In a mixing bowl, put the eggs, milk, and spices. Whisk together very well so that the mixture is frothy. Pour over the potatoes, cover and cook over medium heat until the eggs are set on top. Remove cover and sprinkle the top with cheese. Place under the broiler for 2-3 minutes or until golden brown and bubbly. Cut into wedges and serve warm.
